Ingredients
  • Vegetable cooking spray
  • 3 cups corn cut from cob
  • 1 clove garlic minced
  • 3 tablespoons unsweetened pineapple juice
  • 3 tablespoons skim milk
  • 1-1/2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/4 cup sliced green onions

Directions
  1. Coat a large skillet with cooking spray then place over medium heat until hot.
  2. Add corn and garlic then sauté 5 minutes.
  3. Combine pineapple juice and next 5 ingredients then add to corn.
  4. Cover then reduce heat and simmer 15 minutes stirring occasionally.
  5. Add green onions then cover and cook an additional 5 minutes.
