How to make it

  • Use raisins, currants, dates and/or prunes for the fruit in this recipe.
  • Wash fruit then drain and chop it fine.
  • Sift flour and measure it then sift it again with baking powder and sugar.
  • Work in the butter until mixture is in particles the size of peas.
  • Add to this the beaten egg then the milk slowly stirring just enough to mix.
  • Add fruits then spoon batter into a greased tube or ring cake pan.
  • Bake at 375 for 25 minutes.
  • Remove cake to a cookie sheet and spread it with a thin icing and sprinkle with chopped nuts.
  • Return it to the oven for 2 minutes then slide it onto a cake plate and serve warm or cold.
