CHICKEN SOUFFLÉ This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. Notation on card indicates this came from Lillie Mae in 1942.

Ingredients
  • 1 cup medium cream sauce
  • 1 cup minced cooked chicken
  • 1 teaspoon grated onion
  • 1/2 cup sautéed fresh mushrooms
  • 1 tablespoon minced parsley
  • 1/2 teaspoon celery salt
  • 1/8 teaspoon white pepper
  • 3 eggs separated

Directions
  1. Add beaten egg yolks to white sauce then stir and cook 1 minute longer.
  2. Add chicken, onion, parsley and mushrooms then cool.
  3. Beat egg whites stiff but not dry then fold them lightly into chicken mixture.
  4. Pour into ungreased baking dish and place in shallow pan lined with thick dampened paper.
  5. Bake in preheated electric oven or roaster at 350 for 50 minutes.
