How to make it

  • Boil chicken with celery tops and 1 T salt. Save broth for sauce.
  • Cut cooked chicken in bite sized pieces.
  • Sauté chopped onion, celery, pepper and mushrooms in butter. Season this mixture with lots of pepper, salt, paprika, red pepper and accent.
  • Stir in chicken.
  • Make thick white sauce using 1 quart chicken broth and ¾ cup flour.
  • Stir sauce into chicken mixture.
  • Place in 9x13 baking dish.
  • To make pinwheels, combine flour, salt, shortening and ice water.
  • Roll out and sprinkle cheese and pimentos on top.
  • Roll up like a jelly roll and cut into slices.
  • Place on top of chicken.
  • Bake at 375 degrees for 45 minutes.
