Hands Off Pasta Sauce Recipe
This is my default recipe. I keep a jar of this on-hand as much as possible. What a treat to have homemade spaghetti sauce ready and waiting like that! Refrigerates and freezes nicely.

Ingredients
  • 2 teaspoons extra virgin olive oil (EVOO)
  • 1 cup diced onion
  • ½ teaspoon oregano
  • 1 teaspoon rosemary
  • 1 ½ teaspoon chopped garlic
  • 1 bay leaf
  • ¼ cup white wine
  • ¾ cup chicken broth or stock
  • 2 cups tomato sauce
  • 3 cups canned chopped tomatoes in juice
  • ¼ cup capers
  • ¼ cup pitted kalamata olives
  • 1/8 cup parsley
  • 1 teaspoon sugar (to counteract tomato acidity)
  • 1 lb. lean ground beef

Directions
  1. Warm skillet, then add EVOO and swirl all around skillet till fully coated.
  2. Brown beef, drain
  3. Add onions and salt to taste, if desired. Cook for 5-7 min. or until soft.
  4. Add all herbs, garlic and bay leaf and cook for 1 minute.
  5. Add wine and bring to boil.
  6. Add stock, sugar, tomato sauce and chopped tomatoes. Simmer for 1.5 hours.
  7. Add capers, olives, parsley and serve over desired pasta.
  8. Note: These are all just a starting point. You do NOT need to use all of these ingredients if you don’t like any one in particular. This is just an idea for how things are done. I add a lot more wine to mine to give it a more distinct and sophisticated flavor.
