Mango Pineapple Lime Cheesecake

- 1-1/3 cups ground gingersnap cookies shopping list
- 3-1/2 ounces roasted macadamia nuts shopping list
- 1/4 cup packed golden brown sugar shopping list
- 1-1/2 tablespoons crystallized ginger chopped shopping list
- 2 tablespoons unsalted butter melted shopping list
- 32 ounces cream cheese softened shopping list
- 1-1/2 cups granulated sugar shopping list
- 1 tablespoon minced lime peel shopping list
- 2/3 cup sour cream shopping list
- 6 tablespoons fresh lime juice shopping list
- 4 large eggs shopping list
- 1 mango peeled pitted and sliced shopping list
- 3 kiwi fruit sliced and peeled shopping list
- 1 small pineapple reserved shopping list
How to make it
- Quarter pineapple then peel and core then thinly slice and reserve leaves.
- Preheat oven to 350 then generously butter spring form with high sides.
- Finely grind first 4 ingredients in processor then add butter and blend until crumbs are moistened.
- Press mixture on bottom and 1-3/4" up sides of pan.
- Bake until crust is set about 8 minutes then transfer to rack and cool.
- Maintain oven temperature.
- Using electric mixer beat cream cheese, sugar and lime peel in large bowl until light and fluffy.
- Beat in sour cream and lime juice then add eggs 1 at a time beating just until blended.
- Pour filling into crust then bake for 1 hour and 20 minutes.
- Transfer to rack and cool 10 minutes then run small sharp knife around pan sides to loosen cake.
- Cover then chill overnight.
- Place mango around top edge of cake then place kiwi then pineapple in centre.
- Garnish with pineapple leaves.
