this simple home made teriyaki salmon is a great summer meal paired with sesame shiitake and fresh blanched Japanese veg the salmon retains incredible juiciness, color and vibrant flavor

Ingredients
  • 1 lb fresh salmon or 4 single portion fillets
  • 3 mL shoyu (soy sauce or tamari)
  • 3 mL mirin (rice wine)
  • 3 mL fine caster sugar
  • 3 mL sake

Directions
  1. combine sugar, shoyu, mirin and sake in a small sauce pan
  2. heat on low until sugar is disolved
  3. divide salmon into portions
  4. reserve 1/2 the teriyaki mixture
  5. marinate salmon in 1/2 the teriyaki mixture for 15-30 minutes, in the fridge
  6. move the salmon to an oven safe dish
  7. preheat the oven to broil and move top rack close to heat source
  8. broil the salmon about 6 minutes, then baste with reserved marinade to ensure moisture
  9. flip salmon if desired, allow to broil additional 6 minutes or until the color has lightened to pink and the fish is flaky
  10. baste a final time before cooling, and/or spoon remainder of teriyaki on salmon after plating
