How to make it

  • combine sugar, shoyu, mirin and sake in a small sauce pan
  • heat on low until sugar is disolved
  • divide salmon into portions
  • reserve 1/2 the teriyaki mixture
  • marinate salmon in 1/2 the teriyaki mixture for 15-30 minutes, in the fridge
  • move the salmon to an oven safe dish
  • preheat the oven to broil and move top rack close to heat source
  • broil the salmon about 6 minutes, then baste with reserved marinade to ensure moisture
  • flip salmon if desired, allow to broil additional 6 minutes or until the color has lightened to pink and the fish is flaky
  • baste a final time before cooling, and/or spoon remainder of teriyaki on salmon after plating
