An easy potato soup.

Ingredients
  • 3 c. diced potatoes
  • 1/2 c. celery
  • 1/2 c. diced onion
  • 1 1/2 c. water
  • 2 chicken bouillon cubes
  • 1/2 tsp. salt
  • 2 c. milk
  • 1 c. sour cream
  • 2 tbsp. flour
  • 1 tbsp. chopped chives

Directions
  1. Combine potatoes,celery, onion,water,bouillon
  2. and salt in a large saucepan.
  3. Cover;cook for about 20 min
  4. or until potatoes are just tender, not mushy.
  5. Add 1 cup milk; heat.
  6. Mix sour cream ,flour chives and remaining milk in a medium bowl.
  7. Stir in sour cream mixture into soup base gradually.
  8. Cook over low heat, stirring constantly, until thickened.
