Nettys Lemon Pepper Chicken Recipe

Ingredients

2 Small boneless chicken breast

Salt to taste

Pepper to taste

zest and juice from 1 lemon(for some real zing if marinated in all day)

1/2 tsp garlic (optional)

1 cup chicken broth or bullion

1 small square casserole dish

NOTE: instead of fresh lemon and black pepper, you can use lemon pepper seasoning instead. It just depends on how lemony you want your chicken:)

Directions

If working with frozen chicken please thaw first

preheat oven to 450 F

pierce chicken here and there with fork or knife but not too much on a plate

put chicken in casserole dish

salt and pepper chicken to taste

Add garlic if you wish

pour in chicken broth or bullion

add the zest and lemon juice to the broth and stir around

put in the oven at 450 for 30 minutes

Serve with mixed veggies and my Lemon Thyme Rice

(NOTE) if you like you can marinate the chicken all day in the fridge then put in oven when ready to cook supper. That way the flavors really soak into the chicken. That's what I do more often than not.
