How to make it

  • Cut the chicken breasts horizontally through the centre, almost all the way through, pat dry with kitchen towel.
  • Fill with mozzarella, fold breast back over to enclose.
  • Drape bacon over the top.
  • Dip in the egg white and then in the Breadcrumbs so coated all over.
  • Place in oven,
  • (I cook at about 180 C, fan assisted oven, for approx 25-30mins)
