The chicken and bacon with the mozzarella really complement each other. Serve with mix veg, or thinly sliced oven roasted potatoes (drizzled in olive oil)

Ingredients
  • 2xChicken Breasts
  • 2xBack Bacon
  • Fresh mozzarella
  • Bread Crumbs
  • Egg white

Directions
  1. Cut the chicken breasts horizontally through the centre, almost all the way through, pat dry with kitchen towel.
  2. Fill with mozzarella, fold breast back over to enclose.
  3. Drape bacon over the top.
  4. Dip in the egg white and then in the Breadcrumbs so coated all over.
  5. Place in oven,
  6. (I cook at about 180 C, fan assisted oven, for approx 25-30mins)
