Spinach Soup

- 2 tbs butter/ margarine/ olive oil (your choice) shopping list
- 1 large onion (diced) shopping list
- 2 medium large potatoes (chopped) shopping list
- 1 tsp yellow curry paste (i like more than this, but i wouldn't do less) shopping list
- 1 bag of baby spinach shopping list
- 4 cups vegetable broth shopping list
- salt and pepper to taste shopping list
How to make it
- melt butter or margarine or heat oil
- sautee onions until translucent
- add potatoes and curry
- sautee for about 5 minutes
- add spinach and cook until moist and reduced in size
- add broth and bring to boil
- lower heat and simmer for about half an hour (will take more or less time depending on size of potatoes)
- puree soup in blender or food processor
- serve garnished with sour cream, plain yogurt, or sprinkled with parmesan or gruyere cheese.
