Ingredients

How to make it

  • melt butter or margarine or heat oil
  • sautee onions until translucent
  • add potatoes and curry
  • sautee for about 5 minutes
  • add spinach and cook until moist and reduced in size
  • add broth and bring to boil
  • lower heat and simmer for about half an hour (will take more or less time depending on size of potatoes)
  • puree soup in blender or food processor
  • serve garnished with sour cream, plain yogurt, or sprinkled with parmesan or gruyere cheese.
