Easy and flavorful brine for poultry.

Ingredients
  • 1 gallon water
  • 1/2 cup kosher salt
  • 1/2 cup brown sugar
  • 2 bay leaves
  • 3 bunches of thyme
  • 1 full head of garlic, smashed
  • 6 juniper berries
  • 10 crushed peppercorns
  • 1 lemon juiced, then add the lemon itself to brine.

Directions
  1. Mix all together and stir/whisk until salt and sugar dissolve.
  2. I usually butterfly a whole chicken and soak it overnight.
  3. Double the amounts for a turkey.
