How to make it

  • Preheat oven to 375.
  • Peel outermost layers of skin off heads of garlic then cut off top 1/3 to open cloves.
  • Put heads cut sides up in small baking dish and pour olive oil over.
  • Season with salt and pepper.
  • Cover tightly and place in the oven and roast 45 minutes.
  • Uncover and return to oven until cloves begin to pop out of their skins then allow to cool.
  • When cool enough to handle squeeze garlic into bowl then add oil from baking dish.
  • Mix well until a paste forms.
