This is an amazing recipe that I have made numerous times. I obtained it from the Babb Estate in Crowley, Texas in 1992. We serve it over gripped snapper or chicken, always a big hit. Enjoy

Ingredients
  • 1 fresh pineapple sliced cored and peeled
  • 2 medium peaches peeled halved and pitted
  • 1 small red onion diced
  • 2 jalapeno peppers seeded and diced
  • 8 sprigs fresh cilantro chopped
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 teaspoon fresh lime juice

Directions
  1. Place pineapple rings and peach halves in center of cooking grate and grill 7 minutes.
  2. Turn once halfway through cooking them remove from grill and allow to cool.
  3. Dice fruit and place in a small bowl then add onion, jalapeno and cilantro.
  4. Mix well then season with salt, sugar and lime juice then allow to rest 30 minutes.
