Viva Chicken Tortillas Recipe
Another recipe I obtained from my catering friend. He makes these when he does fiesta parties and everyone loves them. I love this recipe and not only is it tasty it is very comforting.

Ingredients
  • 4 whole chicken breasts
  • 1 dozen corn tortillas
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1-1/4 cup milk
  • 1 white onion chopped fine
  • 1-1/2 cans green chili salsa
  • 16 ounces cheddar cheese

Directions
  1. Wrap chicken in foil and bake at 375 for 50 minutes.
  2. Cut chicken into bite sized chunks.
  3. Grease a shallow pan.
  4. Cut tortillas into thin strips.
  5. Mix soups, milk, onions, and salsa.
  6. Put broth from chicken or water into baking dish.
  7. Layer tortilla strips, chicken and soup mixture until all are used ending with soup mixture.
  8. Top with grated cheese then allow to refrigerate 25 hours.
  9. Bake at 300 for 1 hour and 15 minutes.

This sounds good. And, it seems to be a good way to use up some almost stale corn tortillas! Oh, but is there something special about the 25th hour of refrigeration?
