Double Apricot Glazed Ham Recipe
Apricots and apricot preserves in the glaze made this roasted ham so delectable! My family really enjoyed it --and want me to make it again!! (Serving size is approximate, I think. Recipe from Campbell's Kitchens)

Ingredients
  • 1 cup dried apricots (6 ounces)
  • 1 cup Swanson Chicken Broth or Natural Goodness Chicken Broth
  • 1/2 cup firmly packed Dark brown sugar
  • 6- to 8-pound fully cooked whole boneless ham*
  • 2 Tablespoons butter or margarine
  • 1/2 cup finely chopped shallots
  • 2 jars (12 ounces each) apricot preserves (about 2 cups)
  • 1/4 cup Dijon mustard
  • 2 teaspoons grated orange rind

Directions
  1. PLACE apricots and broth in microwavable measuring cup.
  2. Microwave on HIGH for 2 minutes.
  3. Let cool.
  4. Remove apricots and cut into (bite-size) strips.
  5. Reserve broth.
  6. Mix apricots, sugar and --1/4 cup of the reserved broth, reserving the rest.
  7. PLACE ham in roasting pan.
  8. Bake at 325-degrees F. for 2 hours or until thermometer registers 140-degrees F. (Allow 15 minutes per pound).
  9. Top with apricot mixture during last 30 minutes of baking, basting frequently with pan drippings.
  10. HEAT butter in skillet.
  11. Add shallots and cook until tender.
  12. Add apricot preserves, Dijon mustard, grated orange rind and remaining reserved broth.
  13. Heat to a boil.
  14. Cook over low heat 10 minutes or until slightly thickened.
  15. SLICE ham and serve with apricot sauce.
  16. *THIS recipe can be halved.
  17. Use 3-pound fully cooked boneless ham for 16 servings.
  18. Prepare as above but reduce remaining ingredients in half, and adjust baking time for a 3 pound ham.

Hi bluewaterandsand! The apricots really do make this tasty. This past Thanksgiving, I was ready for something besides the traditional brown sugar glaze, and this recipe really turned out great!
