Chilled  Apricot Soup Recipe
A delicious and pretty hot weather soup- nice for a ladies luncheon

Ingredients
  • Two cans ( 29 oz each ) apricot halves
  • 1 cup sour cream
  • white wine to taste ( fruity wine nice )
  • mint leaves for garnish

Directions
  1. Drain apricots well.
  2. Save juice for another use if desired.
  3. Puree apricots in blender.
  4. Add sour cream and blend well again.
  5. Stir in a little white wine for desired flavor
  6. Chill very well before serving.
  7. Garnish individual servings with mint leaves
