Chilled Apricot Soup

- Two cans ( 29 oz each ) apricot halves shopping list
- 1 cup sour cream shopping list
- white wine to taste ( fruity wine nice ) shopping list
- mint leaves for garnish shopping list
How to make it
- Drain apricots well.
- Save juice for another use if desired.
- Puree apricots in blender.
- Add sour cream and blend well again.
- Stir in a little white wine for desired flavor
- Chill very well before serving.
- Garnish individual servings with mint leaves
