Given to me by a friend, a nice way to prepare chicen for a party

Ingredients
  • 3 whole chicken fryers
  • salt and pepper to taste
  • garlic powder to taste
  • 2 jars of whole cherry preserves
  • 1 can of orange juice concentrate undiluted
  • 2 cans of water
  • 1/2 stick butter or margarine softened
  • 1/4 cup dry vermouth

Directions
  1. Cut chicken up into serving pieces
  2. Season with salt, pepper and garlic
  3. Make a sauce by combing the orange juice concentrate, water , preserves, butter and vermouth.
  4. Bring sauce to a boil and simmer about 15 minutes.
  5. Pour sauce over chicken and bake uncovered 350F for 15 minutes.
  6. Turn chicken over ( skin side up ) and bake about 45 minutes until chicken is cooked with a nice red glaze
  7. Be sure to baste chicken every 15 minutes while baking in oven
  8. Spoon extra sauce over chicken when serving.
