We have this at Thanksgiving time every year. You can make it year round.

Ingredients
  • 6 peeled and boiled sweet potatoes (or you can use a large can of drained yams)
  • 4 TBS butter
  • 1/3 Cup brown sugar
  • 2 TBS Orange Juice
  • 1 TBS Sherry
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 2 eggs
  • 15 oz can crushed pineapple drained extra well (squeeze or press them)
  • small marshmellows

Directions
  1. Pre heat oven to 350
  2. place sweet potatoes;butter ;;brown sugar; o.j.;sherry ; salt and cinnamon; and 2 eggs in a large bowl.
  3. Smash together (or beat with mixer)
  4. pour into casserole dish
  5. cover with crushed drained pineapple
  6. cover pineapple with marshmellows
  7. cook 30 min.
