Power Granola Recipe
This is a family staple around here. I like to quadruple the batch. It stores well in a large plastic bucket.container. A great way to get coconut oil/fiber into your diet!

Ingredients
  • 8 c. rolled oats
  • 1 3/4 c. puffed millet
  • 1 c. oat bran
  • 1 c. chopped or sliced almonds
  • 1/2 c. Rapadura or brown sugar
  • 1 c. coconut flour
  • 1 1/4 c. virgin coconut oil
  • 1 c. raw honey
  • 2 t. vanilla
  • 1 t. cinnamon

Directions
  1. Combine dry ingredients in a large mixing bowl.
  2. In a 2-qt. saucepan, heat the coconut oil, honey, vanilla, and cinnamon until runny.
  3. Combine dry and liquid ingredients.
  4. Bake on cookie sheets in 350 degree oven for 18-22 minutes.
  5. Let cool before storing.
  6. Add raisins, dried fruit, or carob chips, be creative!
  7. Serve with fresh fruit -- YUM!
