Upside-Down Pumpkin Pie

- 1 cup granola, low fat shopping list
- 16 ounces pumpkin, can use can pumpkin shopping list
- 14 ounces sweetened condensed milk, fat free shopping list
- 2 large eggs shopping list
- 1 tsp. cinnamon, ground shopping list
- 1/2 tsp. ginger, ground shopping list
- 1/2 tsp.nutmeg, ground shopping list
- 1/2 tsp salt shopping list
How to make it
- Preheat oven to 425F.
- In a large bowl,combine all ingredients except granola topping.
- Mix well.
- Pour into square baking pan. Bake 15 minutes.
- Reduce oven temperature to 350 F, and bake 30 minutes longer.
- Sprinkle granola over top of pumpkin. Bake for 5 to 10 minutes or until knife inserted 1-inch from edge, comes out clean.
- Let cool and serve with fat free Cool Whip.
