TACO IN A PAN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 1 pound extra lean ground beef
  • 2 cups water
  • 1 package taco seasoning mix
  • 2 cups minute rice
  • 1 cup Mexican shredded cheese
  • Tortilla chips coarsely crushed
  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream

Directions
  1. Brown ground beef in large skillet then add water and seasoning mix and bring to boil.
  2. Stir in rice then sprinkle with cheese and cover then cook over low heat 5 minutes.
  3. Top with tortilla chips, lettuce, tomatoes and sour cream.
