Peach Ice Cream

- 2 cups finely chopped ripe peaches shopping list
- 1-1/4 cup granulated sugar shopping list
- juice from 1/2 lemon shopping list
- 2 large eggs shopping list
- whipped cream shopping list
- 1 cup whole milk shopping list
How to make it
- Peel and pit peaches then chop into a pulp.
- Combine peaches, 1/2 cup sugar and lemon juice in a bowl.
- Cover and refrigerate 2 hours stirring mixture every 30 minutes.
- Remove peach mix from refrigerator and drain juice into another bowl.
- Return peaches to the refrigerator.
- Whisk eggs in a mixing bowl until light and fluffy.
- Whisk in remaining sugar a little at a time then continue whisking until completely blended.
- Pour in cream and milk then whisk to blend then add peach juice and blend.
- Transfer mixture to an ice cream maker and freeze following manufacturer's instructions.
- After the ice cream stiffens add the peaches then continue freezing until the ice cream is ready.
