Romanesque Baked Chicken Recipe
ROMANESQUE BAKED CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 1/2 pound spaghetti
  • 4 large chicken breasts
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons oil
  • 1 cup white onion chopped
  • 1 cup green pepper chopped
  • 1 garlic clove minced
  • 16 ounces tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated parmesan cheese

Directions
  1. Preheat oven to 350.
  2. In a large pot of boiling salted water cook spaghetti until just tender then drain.
  3. Put in a buttered rectangular baking dish.
  4. Season chicken with salt and pepper.
  5. In a large skillet heat oil over medium heat then add chicken and cook 5 minutes per side.
  6. Arrange on top of spaghetti.
  7. Add onion, pepper and garlic to pan then cook 5 minutes.
  8. Add tomato sauce, Worcestershire and oregano then cook 1 minute.
  9. Pour over chicken and spaghetti then sprinkle with parmesan cheese.
  10. Cover and bake 45 minutes.
