Milanaise Pork Medallions Recipe
A great fast way to make a tasty pork tenderloin meal for one. Can be doubled or more. Serve with steamed rice or on a bed of mixed salad greens.

Ingredients
  • 2 (2oz) Pork Tenderloins
  • 1 Egg, beaten
  • 1/4 c. Parmesan Cheese
  • 1 tsp.Olive Oil
  • Fresh Cilantro
  • Steamed rice or
  • bed of salad greens per plate

Directions
  1. Dip pork tenderloins into beaten egg and then parmesan cheese.
  2. lightly saute in olive oil.
  3. Place on broiler rack, 1 in.fillets 2-3 in from flame, 3-5 in for thicker pieces.
  4. Broil until brown on one side appox.4-5 min. turn and cook for another 4-5 min or until nicely browned.
  5. Serve with the steamed rice or on the bed of greens.
  6. Garnish with a fresh cilantro sprig.
