Lentils And Spinach Or Greens

- 2 c dried lentils shopping list
- 6 c cold water or vegetable broth shopping list
- 2 tbls red pepper flakes or to taste shopping list
- 2 tsp cayenne pepper shopping list
- 1 lb fresh spinach or greens, washed and drained shopping list
- 2 tbls olive oil shopping list
- 5 garlic cloves, minced shopping list
- 2 tsp salt or to taste shopping list
- 2 tsp turmuric shopping list
- 2 tsp ground allspice shopping list
- 3 tsp ground cinnamon shopping list
- 2 tsp garam marsala shopping list
- Hot Oil Sauce: shopping list
- 1 1/2 - 2 tsp cumin seeds shopping list
- 4 tbls olive oil shopping list
- 2 cloves garlic shopping list
- 2 dried whole red peppers shopping list
- 1 tsp cayenne pepper shopping list
- 1 tsp fresh ginger (optional) shopping list
- 1 tsp dried turmeric or 1 finger fresh turmeric shopping list
- 2 large onions, thinly sliced vertically shopping list
- 3 c plain yogurt shopping list
How to make it
- Put lentils, water, and half of the sliced onion (can fry first) in a medium stockpot and bring to a boil.
- Lower heat and simmer for 40 minutes.
- Fry other half of onions in 1 tbls oil in pan on stovetop until browned and somewhat crisp and set aside.
- Add more water if needed, enough to bring mixture to a boil again.
- Add the salt, spices, and spinach/greens.
- Cover and boil gently 6 - 7 minutes.
- For Hot Oil Sauce, in separate pan in olive oil, brown cumin seeds and garlic together with red peppers and cayenne. Serve as a side topping for extra heat.
- Stir in the other tbls olive oil and serve with yogurt and fried onion on top.
