Mixing rice and beets makes for a delish salad! It's tasty and pretty. Simple and deliciously different is my motto

Ingredients
  • 3 cups coarse grated fresh cooked beets (several small or 1 very large beet)
  • 2 cups cooked white rice
  • extra virgin olive oil to taste
  • Dijon mustard to taste
  • salt and fresh grated black pepper to taste
  • salad greens
  • Fresh herbs as desired and sliced sweet onion to taste

Directions
  1. Combine the rice and beets.
  2. Liberally add the olive oil to taste with Dijon mustard ( 2 Tbs. to start ) to taste.
  3. Season with salt and pepper.
  4. Scoop a portion out onto greens and garnish with fresh herbs and sliced white onion as desired.
