Portuguese Pickled Pork Recipe
This recipes comes from one of the estate sales I purchased recently. I have not tried it, but would love to know how it is. If anybody tries it let me know the outcome. Enjoy

Ingredients
  • 4 pound boneless pork loin roast
  • 1-1/2 cup water
  • 1 cup cider vinegar
  • 3 small dried hot chili peppers crushed
  • 2 cloves garlic crushed
  • 1-1/2 teaspoon salt

Directions
  1. Place pork in large heavy plastic bag.
  2. Mix water, vinegar, peppers, garlic and salt then pour into bag.
  3. Press out air and seal then refrigerate several hours turning pork occasionally.
  4. Remove pork from bag and place on rack in shallow roasting pan then pour marinade over.
  5. Bake in preheated 350 oven for 2 hours then allow to stand 30 minutes before slicing.
