How to make it

  • slice the eggplants and grill them, brushing the slices with a little bit of oil.
  • In the meantime, slice the onion, chopped the bok choy into fairly big sizes, pass the garlic through the garlic press.
  • Put the grilled eggplant slices aside.
  • stir fry the dried shrimps, add the garlic and onion, cook for a few seconds.
  • add the bok choy, stir try until just wilted and then add the grilled eggplants slices. stir fry gently for a few more seconds.
  • remove from heat and season with pepper, fish sauce and lemon juice.
