Dry Spicy Beef Curry

- 500g beef, cut intto small pieces shopping list
- 3 cups of beef stock shopping list
- 4 tbsp thick coconut milk shopping list
- 4 tbsp olive oil shopping list
- 2 cardamon shopping list
- 2 star anise shopping list
- 2 stalk lemon grass, smash shopping list
- 4 cm cinnamon stick shopping list
- 250g tomato puree shopping list
- 3 tbsp curry powder shopping list
- 2 tbsp chili paste shopping list
- 6 shallots shopping list
- 4 cloves garlic shopping list
- 2 cm galangale shopping list
- 2 cm ginger shopping list
- salt and sugar to taste shopping list
How to make it
- Ground shallots, garlic, galangale and ginger.
- Heat pan with oil.
- Add ground ingredients, cinnamon, cardamom, star anise and lemon grass.
- Fry until fragrant.
- Add chili paste and curry powder, and mix well.
- When mixture becomes thick add beef and 1/2 cups of beef stock.
- Mix well the mixture and beef.
- Add tomato puree, coconut milk and the remaining beef stock.
- Simmer for 1 hour or until beef is tender.
- Add salt and sugar to taste and cook until gravy is thick.
- Serve with rice or bread.
