Ingredients
  • 500g beef, cut intto small pieces
  • 3 cups of beef stock
  • 4 tbsp thick coconut milk
  • 4 tbsp olive oil
  • 2 cardamon
  • 2 star anise
  • 2 stalk lemon grass, smash
  • 4 cm cinnamon stick
  • 250g tomato puree
  • 3 tbsp curry powder
  • 2 tbsp chili paste
  • 6 shallots
  • 4 cloves garlic
  • 2 cm galangale
  • 2 cm ginger
  • salt and sugar to taste

Directions
  1. Ground shallots, garlic, galangale and ginger.
  2. Heat pan with oil.
  3. Add ground ingredients, cinnamon, cardamom, star anise and lemon grass.
  4. Fry until fragrant.
  5. Add chili paste and curry powder, and mix well.
  6. When mixture becomes thick add beef and 1/2 cups of beef stock.
  7. Mix well the mixture and beef.
  8. Add tomato puree, coconut milk and the remaining beef stock.
  9. Simmer for 1 hour or until beef is tender.
  10. Add salt and sugar to taste and cook until gravy is thick.
  11. Serve with rice or bread.
