I got this from another teacher who used to bring a bunch of photocopies of the recipe with him whenever he brought the cake to anything! It is very easy and delicious!

Ingredients
  • 1 cup pecans, chopped
  • Cake:
  • 1 pecan cake mix
  • 1 vanilla instant pudding
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup cooking oil
  • 1/2 cup amber rum
  • Glaze:
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1/2 cup amber rum

Directions
  1. Preheat oven to 325 F.
  2. Grease and flour a tube or bundt pan
  3. Sprinkle pecans over bottom of pan
  4. Mix all above cake ingredients together
  5. Pour the cake batter over the pecans and bake for 1 hour.
  6. For the glaze, melt the butter in a saucepan, stir in the water and sugar. Boil 5 minutes; stirring constantly. Remove from heat and stir in the rum.
  7. Remove cake from oven when done, cool and invert onto serving plate. Prick the top of the cake all over with your pricker of choice (I use a knitting needle). Drizzle glaze into all the holes. Also smooth glaze onto the sides of the cake. Use up all the glaze. Allow the cake to absorb the glaze before eating. The longer this cake sits, the better it is!!
