Rum Pecan Pudding Cake

- 1 cup pecans, chopped shopping list
- Cake: shopping list
- 1 pecan cake mix shopping list
- 1 vanilla instant pudding shopping list
- 4 eggs shopping list
- 1/2 cup cold water shopping list
- 1/2 cup cooking oil shopping list
- 1/2 cup amber rum shopping list
- Glaze: shopping list
- 1/2 cup butter shopping list
- 1/4 cup water shopping list
- 1 cup granulated sugar shopping list
- 1/2 cup amber rum shopping list
How to make it
- Preheat oven to 325 F.
- Grease and flour a tube or bundt pan
- Sprinkle pecans over bottom of pan
- Mix all above cake ingredients together
- Pour the cake batter over the pecans and bake for 1 hour.
- For the glaze, melt the butter in a saucepan, stir in the water and sugar. Boil 5 minutes; stirring constantly. Remove from heat and stir in the rum.
- Remove cake from oven when done, cool and invert onto serving plate. Prick the top of the cake all over with your pricker of choice (I use a knitting needle). Drizzle glaze into all the holes. Also smooth glaze onto the sides of the cake. Use up all the glaze. Allow the cake to absorb the glaze before eating. The longer this cake sits, the better it is!!
