Ingredients
  • 1 bunch of white asparagus ( green if you can't find white ) spears
  • Toasted fresh brioche crumbs or similar crumbs ( egg bread etc )
  • Butter ( perhaps 1/2 stick )
  • salt and pepper to taste

Directions
  1. Snap off lower end or cut off tough ends from asparagus so you will only have the most tender parts.
  2. Wolgang explains white asparagus takes a bit longer to cook than the green.
  3. I precooked the asparagus a bit ( crisp tender ) in boiling water, drained well
  4. In saute pan melt butter and add a handful of toasted ( or plain ) brioche or similar bread crumbs.
  5. Cook and stir until breadcrumbs are browned.
  6. Added the asparagus cooking and turning in crumbs and butter and cook till tender over medium - high heat.
  7. Asparus will be coated in the crumbs. Looks great !
  8. Serve as a side dish with poultry
