How to make it

  • Snap off lower end or cut off tough ends from asparagus so you will only have the most tender parts.
  • Wolgang explains white asparagus takes a bit longer to cook than the green.
  • I precooked the asparagus a bit ( crisp tender ) in boiling water, drained well
  • In saute pan melt butter and add a handful of toasted ( or plain ) brioche or similar bread crumbs.
  • Cook and stir until breadcrumbs are browned.
  • Added the asparagus cooking and turning in crumbs and butter and cook till tender over medium - high heat.
  • Asparus will be coated in the crumbs. Looks great !
  • Serve as a side dish with poultry
