Wolgang Pucks White Asparagus

- 1 bunch of white asparagus ( green if you can't find white ) spears shopping list
- toasted fresh brioche crumbs or similar crumbs ( egg bread etc ) shopping list
- butter ( perhaps 1/2 stick ) shopping list
- salt and pepper to taste shopping list
How to make it
- Snap off lower end or cut off tough ends from asparagus so you will only have the most tender parts.
- Wolgang explains white asparagus takes a bit longer to cook than the green.
- I precooked the asparagus a bit ( crisp tender ) in boiling water, drained well
- In saute pan melt butter and add a handful of toasted ( or plain ) brioche or similar bread crumbs.
- Cook and stir until breadcrumbs are browned.
- Added the asparagus cooking and turning in crumbs and butter and cook till tender over medium - high heat.
- Asparus will be coated in the crumbs. Looks great !
- Serve as a side dish with poultry
