Gazpach Soup

- 6 tomatoes shopping list
- 1 1/2 c finely diced cucumber shopping list
- 3/4 c finely diced celery shopping list
- 1 c peeled and finely diced carrot shopping list
- 1/2 c finely diced white onion shopping list
- 1/3 c finely chopped flat leaf parsley (fresh) shopping list
- 1 Tbsp extra virgin olive oil shopping list
- 2 tsp wine vinegar shopping list
- 1 Tbsp salt shopping list
- 1 Tbsp chopped garlic shopping list
- 2 tsp dried oregano shopping list
- 1 tsp sugar shopping list
- 1 tsp ground black pepper shopping list
How to make it
- Do not use a food processor. That will ruin the color of the tomatoes.
- Chop the tomatoes extremely fine.
- Add all other ingredients and stir well.
- Transfer to a non-aluminum container.
- Cover, and refrigerate overnight.
- Pass the mix through a fine mesh sieve using the back of a large spoon.
- Salt and pepper to taste.
- Refrigerate until chilled. Serve in chilled bowls
