Gazpach Soup Recipe
Gazpacho soup - remember not to send it back because it's cold.

Ingredients
  • 6 tomatoes
  • 1 1/2 c finely diced cucumber
  • 3/4 c finely diced celery
  • 1 c peeled and finely diced carrot
  • 1/2 c finely diced white onion
  • 1/3 c finely chopped flat leaf parsley (fresh)
  • 1 Tbsp extra virgin olive oil
  • 2 tsp wine vinegar
  • 1 Tbsp salt
  • 1 Tbsp chopped garlic
  • 2 tsp dried oregano
  • 1 tsp sugar
  • 1 tsp ground black pepper

Directions
  1. Do not use a food processor. That will ruin the color of the tomatoes.
  2. Chop the tomatoes extremely fine.
  3. Add all other ingredients and stir well.
  4. Transfer to a non-aluminum container.
  5. Cover, and refrigerate overnight.
  6. Pass the mix through a fine mesh sieve using the back of a large spoon.
  7. Salt and pepper to taste.
  8. Refrigerate until chilled. Serve in chilled bowls
