How to make it

  • Do not use a food processor. That will ruin the color of the tomatoes.
  • Chop the tomatoes extremely fine.
  • Add all other ingredients and stir well.
  • Transfer to a non-aluminum container.
  • Cover, and refrigerate overnight.
  • Pass the mix through a fine mesh sieve using the back of a large spoon.
  • Salt and pepper to taste.
  • Refrigerate until chilled. Serve in chilled bowls
