Refried Beans Recipe

Refried Beans Recipe
I was tired of buying refried beans in a can with mystery ingredients. I figured boiling beans can't be that hard :)

Ingredients
  • pinto beans
  • stewed chopped tomatoes
  • garlic powder
  • chili powder
  • yellow onion
  • red bell pepper
  • kosher salt

Directions
  1. Take the amount of beans you want and pour them into a pot (I used 2 cups)
  2. cover with water about 1-2 inches above the beans
  3. Boil on low-med for 2 hours, or until beans are very tender
  4. Remove from heat and drain.
  5. place other ingredients into beans and stir
  6. place into blender (this took me a few trips into the blender...do not overfill your blender!)
  7. Blend until consistency is what you want (longer for creamy, shorter for chunky)
  8. Place into tacos, burritos, a side, whatever you want!
  9. Note: it doesn't last long in the fridge so don't make too much. I had one bowl last 2-3 days (we ate it all by then, but the 3rd day it was a little dry since there is no lard)
