How to make it

  • heat a medium sized pan to medium heat
  • PAM/butter coat the pan lightly
  • pour in egg so that it's about 1/4" in depth
  • add salt and pepper
  • tear up basil leaves into the egg
  • sprinkle parmesan cheese on
  • microwave frozen soy bacon (3 strips) for about 1 minute
  • break each slice in 1/2 (making a total of 6 bacon pieces)
  • slice and toast the bagels
  • when the top of the egg is no longer shiny/watery/jiggly give it another 20-30 seconds
  • turn off the heat, flip the egg over so it looks like an omelette
  • slice the omelette in two
  • lightly veganaise the bagels
  • place egg on the bagel
  • place swiss cheese on top
  • place 3 1/2 bacon strips on top
  • place sliced avocado on top
  • place top of bagel on top
  • optionally...
  • baby bell peppers in the eggs
  • tomatos in the eggs
  • sausage instead of bacon
  • whole wheat pita instead of bagel (in this case you would put the entire omelette inside a 1/2 pita)
  • stack the eggs and cheese onto one bagel for the ultimate breakfast!
