How to make it

  • Combine cornstarch,flour,and1 3/4 cup sugar,and salt.Gradually add 2 cups water stirring till smooth.Over med. heat,bring to boil and boil for 1 min,tillshiny and translucent.Stir some of hot mixture into yolks.Pour back into mixture.Return to heat and cook over low heat for 5 min,,Remove from heat .Stir in lemon juice ,lemon zest,and butter.Pour into pie shell .Preheat oven to 400 degrees.Make meringue .Put on top of pie ,seal to edges,and bake 7 to 9 min.{till browned}Let cool 2 1/2 to 3 hrs.Cut with a wet knife.
