Very good but my grand-daughter says it needs to be more tart.

Ingredients
  • Lemon Filling.... Meringue
  • 4 egg whites
  • 1/4 cup cornstarch 1/4 tsp.cream of tarter
  • 3 Tab.flour 1/2 cup of sugar
  • 1 3/4 cup sugar
  • 1/4 tsp.salt
  • 4 egg yolks,slightly beaten
  • 1/2 cup lemon juice
  • 1 T. grated lemon zest
  • 1 T.butter

Directions
  1. Combine cornstarch,flour,and1 3/4 cup sugar,and salt.Gradually add 2 cups water stirring till smooth.Over med. heat,bring to boil and boil for 1 min,tillshiny and translucent.Stir some of hot mixture into yolks.Pour back into mixture.Return to heat and cook over low heat for 5 min,,Remove from heat .Stir in lemon juice ,lemon zest,and butter.Pour into pie shell .Preheat oven to 400 degrees.Make meringue .Put on top of pie ,seal to edges,and bake 7 to 9 min.{till browned}Let cool 2 1/2 to 3 hrs.Cut with a wet knife.
