How to make it

  • Preheat the oven to 350 degrees. Combine the flour, sugar, salt, baking soda, and cocoa powder in a bowl and stir with a fork until mixed. Make a well in the center and add the vanilla, oil, vinegar, and water. Stir with a fork until well mixed. Pour into a 9x9-inch baking dish (or cupcake pan), and bake in the preheated oven for 30 minutes, until a toothpick inserted in center comes out clean.

    Quick, easy, and awesome! I basically use a doubled version of this recipe for my cakes. Rumor has it this recipe (the vinegar and baking soda are the key to the rising action of the recipe) originated in the US during World War II when eggs were not readily available because resources were going to the troops. Back then, this was called "wacky cake".

    OMG! My boyfriend was gone for a business trip for the last week and I decided to make this cake in my heart-shaped cupcake mold. They turned out super cute. Better yet, he LOVED them! They were super moist and yummy. Thanks sooooooo much! I'm vegan and he isn't, so I kind of tricked him and didn't tell him that they were vegan until he devoured them all. Lol.

    I made this for my vegan house-mate for his birthday and EVERYONE loved it. Made it with vegan vanilla butter cream frosting, it was rich and moist and I'm about to make it again.
