Ingredients
  • 8 tb Butter
  • 1 Onion, thinly sliced( sweeter the better)
  • 1 lb Spinach( chopped or torn)
  • 6 6 ounce salmon fliets( approx)
  • Salt and ground black pepper
  • 3 tb Olive oil
  • 1 1/2 c Whipping cream
  • 1/2 c Vodka
  • and the rest of the bottle chilled
  • 3 tb Fresh lime juice
  • hand full of fresh chives Snipped fresh chives

Directions
  1. Combine 4 tablespoons butter
  2. and onion in large Dutch oven.
  3. Cover and cook until onion is golden brown, stirring occasionally, about 25minutes.
  4. Stir spinach into onion and heat until just wilted,
  5. about 3 minutes. Remove from coals -keep warm.
  6. Season salmon with salt and pepper. Heat oil in heavy
  7. large skillet over high heat. Add salmon in batches
  8. and cook about 3 minutes per side for medium.
  9. set on platter Tent with foil to keep warm.
  10. Pour off excess oil from skillet. Add cream and vodka
  11. and boil until slightly thickened, about 4 minutes.
  12. 4 tablespoons butter and stir until butter is just melted. Mix in
  13. lime juice, season with salt and pepper.
  14. Divide spinach and onion mixture among plates. Top
  15. each with salmon fillet. Spoon sauce over. Sprinkle
  16. with fresh chives.
  17. then take some chilled stolies....add nothing to it...cheers......tw
