Zesty and healthy meatless pizza. From Cooking Light. You can add your own favorite veggies in place of the artichokes, if desired. (Roasted bell peppers and onions are my favorite!) :) Prep time includes chilling artichokes for one hour.

Ingredients
  • 1 (9-ounce) pkg frozen artichoke hearts, thawed and coarsely chopped
  • 3 T commercial oil-free Italian dressing
  • 1/2 cup light ricotta cheese
  • 1/3 cup crumbled feta cheese
  • 2 T nonfat sour cream
  • 1/8 tsp hot sauce
  • 2 cloves garlic, minced
  • 1 (16-ounce) Italian bread shell (such as Boboli)
  • 2 plum tomatoes, thinly sliced
  • 1 yellow tomato, thinly sliced
  • 1/8 tsp paprika
  • 1/4 tsp cracked pepper

Directions
  1. Combine artichokes and Italian dressing; toss gently. Cover and chill 1 hour; drain.
  2. Combine artichokes, ricotta cheese, and next 4 ingredients, stirring well.
  3. Spread artichoke mixture evenly over bread shell. Arrange tomato slices over artichoke mixture. Sprinkle with paprika and pepper. Bake at 450 for 15 to 18 minutes or until thoroughly heated. 6 servings.
  4. Per serving: 272 calories; 6.0 g fat; 41.2 g carb
