SEMOLINA CAKES 2 Recipe
these are my favorite semolina cakes i have two recipes for semolina cakes but these are my favorite!!!

Ingredients
  • 125g butter
  • 1 tsp vanilla essence
  • 3/4 cup (150g firmly packed brown sugar
  • 2 eggs
  • 2 cups semolina(320g)
  • 1tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 3/4 cups of lite sour cream
  • 1/2 cup roasted hazelnuts
  • syrup
  • 21/2 cups of sugar
  • 1 1/2 cups of water
  • and juice of half a lemon

Directions
  1. beat butter,sugar and essence together in a medium mixing bowl with electric mixer until light and fluffy. Add eggs one at a time, beating well between additions.
  2. stir in combined sifted semolina, baking powder and baking soda fold in sour cream
  3. spread mixture evenly into greased 20x 30 cm lamington pan top with nuts. bake in moderate oven for about 30 minutes
  4. to make syrup combine sugar and water in medium pan stir over low heat without boiling until sugar is dissolved. stir in juice simmer uncovered without stirring for about 7 minutes or until slightly thickened (do not allow syrup to change color )
  5. pour hot syrup over hot cake leave in pan until syrup has absorbed all syrup then serve warm or cold.
