How to make it

  • beat butter,sugar and essence together in a medium mixing bowl with electric mixer until light and fluffy. Add eggs one at a time, beating well between additions.
  • stir in combined sifted semolina, baking powder and baking soda fold in sour cream
  • spread mixture evenly into greased 20x 30 cm lamington pan top with nuts. bake in moderate oven for about 30 minutes
  • to make syrup combine sugar and water in medium pan stir over low heat without boiling until sugar is dissolved. stir in juice simmer uncovered without stirring for about 7 minutes or until slightly thickened (do not allow syrup to change color )
  • pour hot syrup over hot cake leave in pan until syrup has absorbed all syrup then serve warm or cold.
