chickpealentil and bean soup

- 1 tbls of olive oil shopping list
- 1 large red onion chopped shopping list
- 2 cloves of garlic crushed shopping list
- 1tsp ground cumin shopping list
- 1tsp of ground tumeric shopping list
- 1tsp ground sweet paprika shopping list
- 1/2 tsp ground cinnamon shopping list
- 2x425g cans of chickpeas rinsed and drained shopping list
- 1 340g can red kidney beans rinsed and drained shopping list
- 1/2 cup of red lentils shopping list
- 1.25 litres of vegetable stock(5cups) shopping list
- 1/4cup (60mls) lemon juice shopping list
- 1/3 cup chopped fresh mint shopping list
- 500g spinach shredded shopping list
How to make it
- heta oil in pan, add onion,garlic and spices stirring until onions are soft.
- stir in peas,beans,lentils,stock ,juice and mint,simmer covered, for about 20minutes stirring occasionally or until lentils are tender
- stir i spinach simmer uncovered about 5 minutes or until spinach is just wilted.
