Stuffed Beets Recipe
STUFFED BEETS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 6 large beets
  • 1/4 cup whipped cream
  • 1 teaspoon whipped cream
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cook beets thoroughly then remove from fire and chill in refrigerator.
  2. Peel and hollow out centers.
  3. Combine remaining ingredients then stuff beets.
  4. Chill and serve cold.
