How to make it

  • Cook whole zuchinni in boiling water until bartely tender ( about 7 to 10 minutes ). Do not over cook!
  • Cool and carefully cut in 1/2 lengthwise
  • Scoop insides from shells and mash well.
  • Cook sausage with onions and drain off excess fat.
  • Stir in mashed zucchini.
  • Add remaining ingredients except 2 Tbs of Parmesan cheese.
  • Mix well
  • Spoon mixture into zuchinni shells.
  • Place in shallow baking dish.
  • Sprinkle with cheese.
  • Bake 350 about 30 minutes
