Sausage Stuffed Zuchinni Recipe
One may do this with yellow squash too. It's a really delicious dish and one can add other stuff to it like fried mushrooms or peppers to the filling

Ingredients
  • 4 medium zuchinni
  • 1/4 lb bulk pork sauasage
  • 1/4 cup chopped onion
  • 1/2 cup fine cracker crumbs ( like Ritz - crushed fine)
  • 1/2 cup grated parmesan cheease
  • 1/2 tsp salt
  • garlic powder t to taste
  • pepper to taste

Directions
  1. Cook whole zuchinni in boiling water until bartely tender ( about 7 to 10 minutes ). Do not over cook!
  2. Cool and carefully cut in 1/2 lengthwise
  3. Scoop insides from shells and mash well.
  4. Cook sausage with onions and drain off excess fat.
  5. Stir in mashed zucchini.
  6. Add remaining ingredients except 2 Tbs of Parmesan cheese.
  7. Mix well
  8. Spoon mixture into zuchinni shells.
  9. Place in shallow baking dish.
  10. Sprinkle with cheese.
  11. Bake 350 about 30 minutes
