  • FLOUR TORTILLAS CUT INTO (8) 3-4" CIRCLES
  • OIL TO FRY
  • 4-5 CLOVES GARLIC DICED
  • 2-3 TBLS ONION DICED
  • 6 CUPS SPINACH CHOPPED
  • 4-5 SLICES BACON CHOPPED
  • 2 MED MUSHROOM CHOPPED
  • 1/2 CUP CREAM
  • 2 TBLS CRUSHED CASHEWS
  • 1\2 CUP PARMESAN CHEESE
  • 1 CAN PETITE DICED TOMATO
  • SALT & PEPPER

Directions
  1. FRY TORTILLAS IN OIL
  2. DRAIN ON PAPER TOWEL
  3. IN A SMALL AMOUNT OF OIL FRY GARLIC, ONION, BACON & MUSHROOM
  4. ADD CREAM, SPINACH & CASHEWS; LET THICKEN
  5. SEASON WITH SALT & PEPPER
  6. PLACE A SMALL AMOUNT OF MIXTURE ON EACH TORTILLA
  7. TOP WITH PARMESAN CHEESE
  8. PLACE TSP OF DICED TOMATO IN CENTER
