King Crab Potato Salad

- 4 good size russet potatoes shopping list
- 4 stalks celery - cut into fine dice shopping list
- 1 lb bacon - cut up into 1 inch pieces before cooking shopping list
- 1 large onion - cut into fine dice shopping list
- 3-4 large king crab legs - shells removed and hand shredded shopping list
- Old Bay Seasoning shopping list
- Mayo shopping list
How to make it
- Cut potatoes into 3/4 inch cubes (leave skins on)
- Put in boiling water - cook until tender
- While boiling the potatoes fry the bacon over medium heat
- Drain the potatoes
- Combine the potatoes, bacon, onion, celery, and crabmeat in a large bowl
- Add a few good shakes of Old Bay seasoning.
- Add mayo, starting with 2 T and gently fold together with a large spoon or by hand. Continue adding mayo until everything is well lubricated.
- Serve.
- I don't add salt as the bacon adds enough for my taste, but you can certainly season as you desire.
