How to make it

  • Prepare sauce by combining cream and queso asadero cheese in saucepan stirring over medium low heat and cook and stir constantly to melt cheese.
  • Heat oil in heavy duty pan till it bubbles and fry tortilla wedges to lightly brown them, about 45 seconds.
  • Fry in batches and don't crowd, drain on paper toweling.
  • Transfer weges to serving platter and sprinkle batches with a little of the cochita cheese.
  • Cover to keep warm.
  • When all are fried, top with melted cheese sauce, remaining grated cheese, peppers and tomato and onion.
  • Serve immediately!
