Cheesey White Nachoes

- 2 cups shredded Queso Asadero or monterey jack cheese shopping list
- 1/2 cup heavy cream shopping list
- 12 tortillas cut into 8 wedges each shopping list
- vegetable oil to fill pan 2 inches deep shopping list
- 1 cup grated Queso Cochita or parmesan cheese shopping list
- 1 to 2 jalapeno peppers minced or as you like shopping list
- 1 lg tomato chopped shopping list
- 1/2 red onion chopped shopping list
How to make it
- Prepare sauce by combining cream and queso asadero cheese in saucepan stirring over medium low heat and cook and stir constantly to melt cheese.
- Heat oil in heavy duty pan till it bubbles and fry tortilla wedges to lightly brown them, about 45 seconds.
- Fry in batches and don't crowd, drain on paper toweling.
- Transfer weges to serving platter and sprinkle batches with a little of the cochita cheese.
- Cover to keep warm.
- When all are fried, top with melted cheese sauce, remaining grated cheese, peppers and tomato and onion.
- Serve immediately!
