This is a delicious lunch dish when served along with fresh fruit. Easy to prepare and looks great on the plate. Use any hummus recipe or the ones I posted already

Ingredients
  • 2 whole chicken beasts :grilled and sliced ( should be enough for 6 to 8 servings- reduce amounts for less servings )
  • 6 to 8 large flour tortilla wraps of choice ( plain, spinach, pesto, tomato basil etc. )
  • shredded carrots
  • thinly sliced radishes
  • thinly sliced tomatoes
  • torn pieces of lettuce or spinach
  • red onion thinly sliced
  • cucumber thinly sliced
  • sliced ripe avocado
  • hummus dip ( optional ) homemade or store prepared
  • dressing of choice: ex: ranch, Caesar, satay, etc.

Directions
  1. Warm the tortillas so they are more flexible for rolling ( I use my microwave ).
  2. Spread with hummus, layer on the desired amounts of vegetables, then chicken, pieces of avocado and drizzle on the desired dressing.
  3. Wrap carefully so filling stays intact and place seam side down on
  4. serving dish.
  5. Slice in half on the diagonal.
  6. Serve with fresh fruit.
  7. Makes a filling and delicious meal. Variations: use (soy based )bacon , different kinds of sprouts, cooked brown rice, cooked black beans etc.
