How to make it

  • Pre-heat grill over high heat
  • Bring veal chops to room temperature
  • In a medium bowl combine the first four ingredients, mix well.
  • When hot, turn grill to medium high.
  • Place chops on grill and cook for 5 minutes per side.
  • Remove chops from grill and squeeze on juice from denuded lemon.
  • Let chops rest for 5 - 10 minutes
  • Place a generous tablespoon of gremolata on each chop.
  • Serve with an Oregon Pinot Noir
