Ingredients
  • 1 kg beef roast
  • 3 onions
  • 6 rashers bacon
  • 1 cup red wine
  • 1 can diced tomatoes
  • 2 teaspoons curry powder
  • 2 tablespoons mixed herbs
  • 1-2 teaspoons crushed garlic
  • approx 2 cups of water depending on dish size.

Directions
  1. Slice the beef roast into very thin slices
  2. peel the onions and cut in half and then thinly slice
  3. cut the rind off the bacon and cut into slices
  4. place a layer of slcied onions in the base of an ovenproof dish then place a layer of beef over the onion and then 2 rashers of the slcied bacon over that. Repeat the layers til all used up.
  5. Mix together the wine, tomatoes and herbs and add the water until there looks to be enough to cover everything in the dish.
  6. Place lid on dish and put into an oven on 180C - 350F
  7. Cook slowly for between 3-4 hours so the meat is very tender.
  8. Serve with either a side salad or cooked vegetables. For carbohydrates use pasta or rice as a sidedish.
