How to make it

  • Slice the beef roast into very thin slices
  • peel the onions and cut in half and then thinly slice
  • cut the rind off the bacon and cut into slices
  • place a layer of slcied onions in the base of an ovenproof dish then place a layer of beef over the onion and then 2 rashers of the slcied bacon over that. Repeat the layers til all used up.
  • Mix together the wine, tomatoes and herbs and add the water until there looks to be enough to cover everything in the dish.
  • Place lid on dish and put into an oven on 180C - 350F
  • Cook slowly for between 3-4 hours so the meat is very tender.
  • Serve with either a side salad or cooked vegetables. For carbohydrates use pasta or rice as a sidedish.
