Porgy Japanese Consulate Style Recipe
This recipe comes via Captain Nick of NY Greenmarket fame from members of the Japanese consulate (across from which he had a stand). It is an amazing way to enjoy this inexpensive fish.

Ingredients
  • 4 porgy fillets
  • 1 t. kosher salt
  • 1/4 cup shallot, finely minced
  • 2 clove garlic, finely minced
  • Zest and juice of 2 limes
  • sesame seeds
  • sesame oil

Directions
  1. Preheat broiler
  2. Rinse and pat dry fillets
  3. Prep baking pan (I use a half-tray covered with foil and sprayed with veg oil)
  4. Place fillets on baking tray and evenly sprinkle all ingredients (in order) over the the fillets, allow to rest for 3 minutes
  5. Broil fish until flaky but moist
  6. Finish with more juice, oil, and seeds if necessary
